Peruvian carob, also known as tara gum, is a natural ingredient used for its thickening and stabilising qualities by the food industry.

Ingredient

Tara gum is obtained from the seeds of Caesalpinia spinosa, a leguminous plant native to the Peruvian and Bolivian Andes. The mature pods are harvested and left to dry in the sun before they are made into flour.

Tara gum is a thickening agent that improves the texture of ingredients and keeps their physical-chemical characteristics more stable over time. It is therefore perfect for use in a high number of recipes such as puddings, sauces, soups and yogurt giving them a denser and more appetising appearance.

Kinder selection and quality control

Kinder uses tara gum in Kinder Maxi King to improve the texture of the cream inside, making its feeling even more pleasant. We only buy the gum from suppliers that exclusively use Peruvian seeds and simple processing methods when carrying out their toasting and grinding.
