Peruvian carob, also known as tara gum, is a natural thickener used to improve the texture of foods thanks to its thickening and stabilising qualities.

Ingredient

Tara gum is obtained from the seeds of Caesalpinia spinosa, a leguminous plant native to the Peruvian and Bolivian Andes, whose mature pods are harvested and left to dry in the sun before they are made into flour.

Combined with other ingredients it improves their texture and keeps their physical-chemical characteristics more stable over time. It is therefore perfect for use in a high number of recipes such as puddings, or yogurt giving them a denser and more appetising appearance.

We use tara gum in Kinder Maxi King wafer to improve and maintain its crispiness, making the sensation on the palate even more pleasant.
